FOOD EN GUANAJUATO


Guanajuato lies in the center of the Republic and, as well as its cultural wealth, is also famed for its cuisine.

Throughout the whole state, the visitor can find an exquisite variety of dishes. Starting, for example, with Apaseo el Grande, a center for cereal and vegetable cultivation which is famous for its snacks and appetizers. Celaya, the "Golden Gate to the Bajio" is famous for its candies. Cajeta - a sort of soft fudge made from goat's milk - is the favorite sweet, packed in small wooden boxes or glass jars; there are also sweet wafers, custard candies, almond cheese and nut candies. Heading north, we come to the town of Comonfort, famous for its dairy ice cream and dishes such as grilled prickly pear leaves, tripe, dry marinade, "black earth " gorditas, "poor man's appetizers", turnip soup, cream tacos, guava candy with cakes and coffee, atole (a corn-based drink, taken hot) and colonche, a traditional drink in these parts made from cactus fruit fermented in covered pots.

In Salamanca, there are appetizers and snacks made with pork and tripe, braised mutton and goat. Irapuato is famous for its strawberries, whether candied or fresh with cream and sugar. Leon is famed for its tripe dishes, stuffed chicken and guacamayas (pork crackling in a roll, liberally doused with salsa). Dolores Hidalgo is known for the incredible variety of flavors of ice cream that can be found here, including pulque (a drink made from fermented cactus), shrimp, corn and tequila, as well as the more traditional seasonal fruit flavors. In San Luis de La Paz, you can find the best chilies in the country.

All over the state, you can find traditional recipes for enchiladas, marinades, tortilla snacks, different ways of preparing lentils, tamales and other appetizers, making Guanajuato one of the best states for a "gastronomical tour".
